Trainer and pastry chef, Nathalie Simoneau transforms her maple syrup, harvested in the mountains of Center-du-Québec, into various traditional products: maple butter, sugar loaf and maple sugar. She uses maple, as the only sugar, to create comforting pastries, inspired by family recipes and these trips.
